BUILDING THE BLEND
When hunting truffles, dim your eyes and follow your nose. Truffles hide underground, and you probably won’t notice the specks of black truffle deep within Chef Salt Truffle Herb. But take a whiff and the unmistakable truffle musk of fertile soil and raw flesh will roil your senses. Blending a perfume as powerful as truffle calls for finesse. We’ve tamed the wild mushroom with an artful dose of forest herbs (rosemary, juniper, thyme, and sage), specks of sweet spice (allspice, clove, and cinnamon), and a surprising salt combo – oak-smoked Halen Mon Gold, mineral-rich Dolce de Cervia, and tart yet fruity pinot noir fleur de sel. It would have been easier to just throw truffle shavings and salt into a jar, but our inner chef wouldn’t approve.
Crushed rosemary and thyme, pinot noir salt, oak-smoked flake salt, sal dolce di Cervia, a big pinch of truffle salt, cracked black pepper, turbinado sugar, mushroom powder, sage, crushed juniper berries, cinnamon, allspice, and clove.
